mount -o remount,rw -t yaffs2 /dev/block/mtdblock3 /system

At which point, I'm clueless.

That is why I would like to just install a nice little ZIP. BUT I have no idea how to do so.

Assuming, of course, that you still have the EVO-Recovery tools in your C: drive, drop the necessary ZIP file on your SDCard, and then connect by USB as HTC Sync...

Start > Run > c:\evo-recovery\adb-windows reboot recovery
... phone reboots to EVO recovery display, and you'll hear the device connected sound in Windows ...

Start > Run > c:\evo-recovery\recovery-windows.bat
... Recovery Menu appears ...

Flash from ZIP file... choose the appropriate zip.

Note: Start > Run can, if not showing on your Start menu, be invoked by WinKey + R
