The Nand backup is a COPY of whatever ROM you run it on, settings and all.
So once you finish the process all you do is restore it and you're back to where you left off without having to set up the ROM from fresh flash.

You COULD reflash a ROM but that'd be a pita imo. Nand backup/restore is the way to go.

If you are using Stock ROM, make sure you are using the rooted Stock ROM. Dont root and stay on the original ROM, very good chance of headaches.
If you are on non-rooted stock, I'd flash rooted stock, set THAT up, THEN run the Nand backup.
