ROM Manager is not a necessity, it's just a very functional app.

Nand backup is a COPY of the current ROM, not a backup of your settings, contacts, etc.

Example:
Your on ROM v1. You run a Nand backup. Your chef releases ROM v2 and you flash that.
If you restore your Nand you're going to be back on ROM v1.

Think of Nand as a failsafe in the event you aren't happy with the new ROM you've just flashed (you dislike it or it's not functioning properly) and want to go back to where you started from.
