OK, for the record, I've had one heck of time trying to downgrade and start from scratch.
I definitely know how to do all the steps, but I'm still running into issues trying to use Rom Manager for loading roms.
The one process that has never failed me, is the original process that I posted. Going into Recovery mode the manual way has worked 100% of the time for me. No matter how bad everything is failing, I can always power down, reboot into bootloader, connect to the pc and run the "recovery-windows.bat" file.
I also noticed everything, at least for me, has been much more reliable if I only connect the phone when I need it to be connected and using XP instead of Windows 7 has also been easier.
Have you tried doing this by the manual method I described? The videos show all the steps.
Also, if what version of Windows are you using?

Now hold volume UP and press power. Select "apply sdcard:update.zip"
Also, read my response to AYSIANA above this. I'm having issues getting Rom Manager to do everything it's supposed to be.

The very 1st time I rooted, the SU icon showed up.
After unrooting and rooting again, it never shows up for me until I install a rooted rom. So, basically I'm in the same boat. No SU icon but loading a custom rom makes the icon show up.
This happened to me even after downgrading completely to a stock shipped rom. I was still unable to make the SU icon show after rooting. I had to install a custom rom to see it.
I had the same results. It only showed up after I loaded a custom rom. What rom are you running.
