While in Google Chat, you should be able to just hit menu > Settings and then uncheck Automatically sign in. Then you can hit menu > more > sign out. Granted it don't have an Evo but it shouldn't be that much different.

Thats the thing I never sign in. I get notifications that I have an IM, but that comes from the status bar at the top. I dont see the gtalk app in applications.
