I found the setting for this in EPST. If anybody's interested, here's the directions.

1. Go to the phone, type in ##778 and press Talk.
2. Select Edit and enter 000000 as the unlock code.
3. Press View Info, and select Modem Settings.
4. Change Preferred Mode to CDMA Only.
5. Change HDR Hybrid Preferred to Disable.
6. Save the changes and it will prompt you to restart the device.

After doing this, I went from one to two or three bars of signal, and hopefully increased battery life as well. While Verizon does have a lot of 3G coverage, it can't compare to the strength of non-3G coverage.
