I assume that we DON'T want to restore the Moment's system on the Evo, but how about data? Because both are running Android 2.1, I assume that we'd be able to. Or is the differing hardware going to cause problems with the restore? Will we be able to redownload any of the paid applications from the Android Marketplace if we are unable to restore the data?
The reason I ask is because I have Openhome and have things configured to my liking.

Once you set up your new Evo w your same gmail address that you used on your moment, all of your purchased apps will show as purchased in the app market. The key is to use the same gmail address.
