I just check date, tasks, calendar, email, live search, and device lock as today screen items and I darkened the stock background so the text shows up.
I'm becoming a minimalist as well. I'm currently trying the old WinMo "today" screen instead of sense and titanium. I really miss all the cool features available in Sense 2.5, but the today screen works well, gives me quick access to the things I need (the most), allows for a lot of free memory, and never stalls or locks up on me. It's a shame that most folks have abandoned it...

I'm currently running SuperROM and it works well in this config. Also seemed to work well with Sense 2.1. Mighty, MH, and Mr. X worked well for me too. I liked VIN's ROM and Energy, but I'm fairly certain that I had faster battery drain with them...
