Two ways I added the REG line to one of my EXTs so that takes care of it either way..

To remove Beta and expire date from today screen you have to delete:
REG:
[HKEY_LOCAL_MACHINE\Software\Microsoft\Shell\Device Beta]

If you want to do it before cooking Rom change it in 1f1aca24-d942-464a-9281-10567741499c.rgu in sys\shell folder to or add it to any REG or RGU as TMartin stated.

[-HKEY_LOCAL_MACHINE\Software\Microsoft\Shell\Device Beta]
