Well I still recommend you set up gmail push nativley in your phone instead of using the p.o.s. sprint mobile mail. What you describe means you already have an exchange account set up you can get to the settings to edit them by hitting the right soft key the go to "configure server..." then you can input the correct data to set up a gmail account. if that doesnt work i would search how to delete the account so you can start over and enter the correct info.
Yes there is a way to add a phone setting as a quicklink but you have to create a shorcut to it and place the shortcut in start menu folder. I do not know how to make the shortcut off the top of my head however if it is like the rest of the normal windows settings I can give you an idea.

the number signs being numbers that refer to the setting linked and the icon used for the shorcut.
example: if you wanted a link to the memory setting you would type this in a text file and save it as some file name.lnk "Memory.lnk" Then you would copy it into \Windows\Start Menu\Programs\Tools\

edit: I dont think this will work for g-sensor since i think it is a setting added by a 3rd party not Microsoft. But it does work great for the normal settings. Its great to have a memory link in 6.5.x
