I still had the pimbackup exe on the omnia (I had already gotten it from that same site) and I ran it again and this time it worked. I don't remember what I had done differently last time but I got a bunch of error messages and the backup was unsuccessfull.
Anyway it worked this time so I guess I can just copy the backup file to my pc and save it there as a safety measure.
I'll go come back to figure out how to flash a rom a little later but I have to head out for now.
