you are correct in the area for making the settings.
tap "wireless networks" then you will see the networks, at the bottom of the screen, "Networks to access" like you stated above.
in the drop down menu you can either choose,
"All Available"<----will show both
"Only access points"<----Infrastructure
"Only computer-to computer" <----adhoc
is this what you are talking about?
