Lets just say, if you only use things that are meant for WinMo 6.5, with Sense 2.1, you'll be just fine on your stock Verizon 6.5 rom.
There are not 10 different categories of apps and mods!!
There are apps and mods for 6.1 roms
There are apps and mods for 6.5 roms
There are apps and mods for 6.5.x roms.
The only thing to check after that is what version of HTC Sense or TouchFlo 3D you are running.
Not a huge list of criteria to check, before installing something.
As you can see, the manufacturer or carrier of your device, has no determination of what will or wont work.
Unless you are talking about network related things, like SMS and MMS.
Of which have both been beat to death for all carriers already, as well.
