as far as i know, OMJ's kitchen (titled: htc sense kitchen) and most of the other ones that I've seen are based on Ervius kitchen (

http://forum.xda-developers.com/showthread.php?t=573778). I have recently started cooking my own ROMs so I dont really know what the advantages are of different kitchens but I can tell you for sure that you won't go wrong with using OMJ's kitchen (the latest is V2.0). I was in the same boat you are a few months ago and using OMJ's kitchen based on his guide was pretty straight forward. Give it a try and if you have any questions, people in OMJ's kitchen thread (or just anyone in general) will be more than happy to help out.
