Also along those lines, I found the "Back up settings" feature in the Android OS but does anyone know exactly what is being backed up?

Good stuff here guys, thanks!
If you update your "rootfs" file or any other file, you should be fine as long as you do not update or change your "data" file. That file is where all the app info is stored. I'VE updated my rootfs and zimage files a few times and am still able to keep my android home screen looking and my apps list the same.
