you can do all of this. This is exactly what I've done to my rom. Basically you can create and install the rom with everything you want in it. configure all your apps to your liking.. then export the registry settings for those apps then just copy it into your personal OEM that you've created with OEMIZER.. Now just re-cook and flash and no customization needed at all.
Just take care not to loose the phone now because if someone hard reset the phone, all your info still remains.
