They successfully used the USB port and a hardware keyboard in that video. Linux was clearly working. Teh OS was clearly NOT the iPhone OS, and the device was clearly running on another OS.
And no, the iPhone is not more secure. As that video proved, people could be flashing ROMs if they wanted. They have a working bootloader. Heck, they have working Linux.

U can practically change any OS by deleting the OS and installing what U want. The problem is, Deleting the OS is deleting the codes as well to make it work. They cannot get those codes to make the iPhone hardware to work coz It's in the OS. The OS is secured, They cannot get the code. So no code, The device will not work. I think that is easy to understand.
