It's like being given administrative access on your phone. When you first get it, you have user access, but are locked out of certain things on your phone, like adding themes that change the lock screen, or other parts of the OS. After rooting, you can load custom roms, and tweak other settings that were previously unavailable. It's like unlocking a WM phone, in order to load a custom wm 6.5 rom.
