You'd lose the mic functionality unless you replaced it with a 3.5mm jack that included mic too. Better solution is just an adaptor. You can pick one up at radio shack or bestbuy cheap.

There are also cheap 2.5mm stereo headphones w/mic that work well. Verizon includes a set with the Apache. That allows you to answer calls while listening to mp3's too.
