I did some more digging and found a list of Packages that can safely be excluded if you choose:

Packages that can be disabled in NATALY's Kitchen.
This is for all the newbies, like me, who have just started making ROMs using NATALY's kitchen.
We usually don't use (or like) stuff like "Market Place" , "Widgets", "Windows Live" etc etc.
So here is the list of all the system packages that can be removed while making the ROM :

After removing all the above packages you will have
128mb free on main memory.
And the
RAM utilization with Titanium [Basic dialer, Large Menu Off, Enhanced Notification off, Classis Lock]
is 45% [after boot].
And
RAM utilization without Titanium is 40-43% [after boot].
