Here's something a bit interesting in my troubleshooting.

I deleted the "wireless" key in the today items (in the registry). Added skype to the today list in settings, soft reset the pda. It came up this time with the normal items plus skype in the today area.... however now in the start menu I am getting what was mentioned with those generic icons (they remind me of the old generic dos icons windows uses).
