For the average users (this category includes me) I would still recommend waiting until the guys like Blazingwolf have it all figured out. There really is very little benefit to rooting at this point until the whiz kids put out some custom content that requires rooting
removing the inbuilt apps seems like kind of a Trivial thing to risk bricking your phone for.
