You can search around here for how to use sashimi and it's pretty straight forward. There is also a website mostly about sashimi HERE. Makisu is the program you run to back up email accounts. It will create an .xml with all of your settings that sashimi installs when it runs.

Maybe a PM is best for that, but it's more of 'how' do I use Sashimi to back it up rather than having me go through all the video tutorials and trying to figure out this program for example. I don't have the time anymore to fumble around with non-user-friendly software. You could say I shouldn't be getting ROMs then, but then you could also say that I should just have kept my Sanyo M1 instead since it does everything this phone does and does them very easily for me. I switched for a multitude of reasons though and I'm looking for a ROM suitable to replace the default one that does everything I need so I can use my phone again. The RTSC one I was using was fantastic, but it's ancient now.
