I'm still putting together some SS, not sure if they'll be ready tonight, but to add to what Scout7 said, to enable or disable a package, double click it. also, the kitchen process' the packages from the top to the bottom, so lets say you had 2 packages with the same files, the one lower in the list will overwrite the previous files. Here is a good example:
for manila 2.5, all the packages in 010_HTCSense_1920_Main are the original WVGA files from the Leo.
All the packages in 010_HTCSense_1920_Main, are the ported VGA files. Those VGA files will overwrite the original WVGA files.
This is done because not all files from the original 2.5 package needed to be ported to VGA, so the files that need to be VGA get overwritten w/ the proper ones.

In the OMJ folder, click on the erviuskitchen.exe, it will load.
Across the top, near the center, click the drop down "DIAMOND" tp select it.
Next in the top right the pull-down for EXT, 6.1, 6.5, 6.5.1.
6.1 = 21055, 6.5 = 21870, 6.5.1 = 23071 or 23504
Now, under that pull down is where you select the XIP and ROM.

Each time you select the packages will reload.
Now, the first few groups will need to remain untouched.
Most of the packages are already selected and need to stay that way.
At the group "Diamond-device packages", These can be selected or deselected to your liking.
The same with "Common:Packages"
The next groups withe "sense" in the title should not be touched.
The last group you can select what you like as long as two packages don't conflict, IE, two taskbars or battery icons.
It is also best not to use any of the "Manila" packages in this group like clocks.
I hate to say this, but a lot of it is trial and error and once you catch the jones for creating roms, it's hard to be happy for long, cause there is always something new around the corner.
