I would recommend the Pegasus Premium 6.5.1 2.1 ROM (link to xda-developers here:
http://forum.xda-developers.com/showthread.php?t=578478).
Windows Mobile 6.5.1 is stable, intuitive, and a big improvement in terms of touch-friendliness. It has Manila 3D 2.1 which is quite good, and the apps are fairly good as well.
