I'll try to help, but others pls correct as necessary.

Manila is the UI provided by HTC, while Titanium is the UI provided by Microsoft. Manila, at its simplest, has the scroll bar on the bottom and you scroll horizontally, with the main screen updated based on your scroll bar selection. Titanium scrolls vertically on the whole screen. The selected item is enlarged over the non-selected items. Sense is the latest version of Manila, aka Manila 2.5, with more finger friendly picking. Finally, you might see some references to Rhodium in the ROMs. Rhodium was the codename for HTC's Touch Pro 2. It then had some variations/improvements on the general Manila theme.
