Had both from Alltel... the 6700 for two years and when my contract was up in September I moved up to the 6800.
I loved my 6700, but the 6800 is just a better machine hardwarewise. HTC really learned a lot from the 6700 and made the necessary improvements.
For me, the biggest difference is battery life... my incredibly tweaked 6700 with various custom ROMs) couldn't even come close to my 6800. I regularly go 30-35 hours without needing a charge. And as wonderful as Helmi_c's WM5 and WM6 ROMs were, the fact is that the Qualcomm MSM7500 processor in the 6800 is just more efficient than the MSM6500 in the 6700. I run acbPowerMeter and see it drawing just over 20mA at idle... where I never was able to get the 6700 much below 80mA.
The other important difference (I don't honestly care about the antenna and modern look and all that... I'm all about usability) is the vastly increased storage memory (64MB vs 256MB). Where the 6700 would typically have around 43MB free for program installs after a hard reset, the 6700 has around 150MB. Again, it's hardware... can't fix it with a custom ROM, though the kitchens help with the 6700's memory, they can't manufacture memory that isn't there.
If my only choice was the 6700, I'd gladly take it... but if you have a choice, the 6800 is an honestly improved phone.
Only thing that would have made the 6800 better, as mentioned above, is if they would have squeezed 128MB of RAM into it You are still stuck with 64MB, just like the 6700. You do run out just as fast.
