Actually, there is a program created by JMZ that provisions the phone on first boot for whatever carrier you select. You can find the EXT here: http://forum.ppcgeeks.com/showthread.php?t=93926
If you add that to the kitchen and build, it should take care of the provisioning for you, but again I can't test that because I don't have a VZW device. In theory it should work just fine.
