This is how I set mine. This will make the mailbox icon in the bottom right launch Outlook.

[HKEY_LOCAL_MACHINE\Software\HTC\Biotouch\APLaunche r\App5]
"Param"="-service "ActiveSync""
"Path"="\Windows\tmail.exe"
"Name"="Outlook"

note that ActiveSync is in quotes, it needs to be in quotes in the registry.
