+1 on Vito Audio Notes Touch...

I use this to record meetings I attend, just in case I missed something. Also, saves the audio files in MP3 format. Recording length is limit to your storage space. Also has a handy record phone calls feature. I have it enabled just in case... Comes in handy when someone's giving you directions, an address, etc. Open up Audio Notes and replay as need.

I tried a few including Recite, which I believe has been discontinued by MS, and this one really wowed me...
