Although I stay current on all the UIs, I always come back to SPB Mobile Shell. For now, the easiest, get-to-your-stuff-the-fastest interface is the new update to mobile shell, MS3.5. It is configurable enough to get your phone to look however you want and still get you to your info, pics, music, apps, and phone faster than anything else.
Also my opinion, Blazingwolf's latest Black 6.5 rom makes a killer foundation to put MS3.5 on top of. I'm very pleased now.

That pretty much says it for me. I use the same ROM with MS3.5.
