Yes, with Exchange you gain
the opportunity to use push mail. You can still set Intervals though!
Open ActiveSync, then go to Menu -> Schedule.
If it's set to "As items arrive" then you'll get your emails immediately. Or, set it to another value to save on battery life. My office is a dead zone for cell signal, so I actually set my phone to switch to "Manually" during my work day, and "As items arrive" when I leave the office to save my battery.
