OK! So I had the keyboard open, let it run for about 5 minutes and then clicked the "Home" hardware button and the progress bar TOOK OFF! So I think it's finishing the install up but it hasn't confirmed that it was finished yet... so strange, but thank you all for the suggestions.
ETA: Ok, so I let it sit for 5 more minutes and then went to the today screen to check the task manager and sure enough the install was complete and it didn't pop up the page to restart the device.
*Now to get the 480x800 skin so I can get iGO8 working!
