There's only one app I've seen that will do colored categories -- AgendaOne:

It doesn't do it out of the box and requires a bunch of configuration by hand because it uses its own category color assignments rather than pulling them from Outlook, but it does work. Problem is it's a pretty heavy app and wants to take over your contacts and other stuff too... meh.
