For the text messaging lag, you can try
http://www.teksoftco.com/index.php?section=speedbooster that mighty suggests. I have tried it on Mighty's ROM and it COMPLETELY eliminates the lag between your typing and what you see on the screen while texting. Try it. It might produce similar results for you here too.
About putting the background for all tabs, it was answered few pages back. Just search this thread and you'll find the answer. The background4alltabs that you are using is not compatible with the 2.1 manilla. (It is known that the 2.0 manilla mods won't work wit the 2.1 manilla and that is why your manilla is crashing on load.)
