I don't have any experience with this, if I did this without a plan, I'd for sure stay away from downloading anything, I would just use it for browsing. I know technically browsing constitutes as downloading too, just not GIGS of info while browsing.

If you're downloading music, movies, software you're probably going to be noticed.. If you're worried about getting caught, add phone as a modem to your plan. Pay now versus pay when you get caught
