I did some research and from what I found out in order to change the color of the font for the appointment reminders on the today screen you have to use a hex editor to manually change the values in the manilla files. There is a couple different programs you can use to edit these files. There is a thread on this site about editing Touchflo3d/Manilla if you want to do it. My advice is to find a Theme that you like and go with it. This seems like the easy solution.
