There are two ways to go about what you want to accomplish.
1. UC
2. Sashimi
Personally I use UC. Here is a VERY informative thread on usage.

The SDConfig.txt file they talk about in the thread is used to install apps, copy files etc. The _ProvXML file is used to setup email, internet connections etc.
You will want to download a xml editor. Don't freak out about it, xml files are just fancy text files. the XML editor will make it easier to keep everything orderly.
