For memory, storage memory changes depending on the size of the rom. If you have a .nbh file (the rom) which is say 140MB because it has more apps and stuff on it vs a rom which is say 80MB, you will have less total storage memory and less free memory as a result. It has to store all the rom info on your phone, and the bigger the rom, the less available space for other stuff. That's the beauty of light ROM's. I think Ultralite ROM has around 120MB of free space, while grooveROM is around 62MB.
In terms of program memory, the total available memory depends on the PagePool that the chef sets. The larger the pagepool, the less total program memory. My ROM has a 24 MB PP, so I have around 192MB program memory. The stock ROM has a 6MB PP, and I think around 211MB program memory.
