Welcome to ppcgeeks.
1. Your phone will keep those settings.
2. Your provider will not know unless you tell them or bring it in to the store and show them.
3. When you flash a new custom rom, like mightyrom5, it will erase everything on your phone. Your phone will work fine. If you want to go back to the original Bell rom, then you can just download it and flash it just like you flash any of the custom roms.
