Welcome to Geekdom! The first thing I tell anyone new to the Geek game is to not be in a hurry to flash a new ROM. There's a couple of reasons for this. First, you need to take time to get to know your device and how it performs under the stock ROM. This way, you'll better appreciate the changes that the custom ROM brings to the table. Next, make sure you completely understand the flashing process. This is where things have a tendency to go terribly wrong if you don't follow the instructions to the letter. One minute you have a cool PPC, the next, a cool paperweight.
To answer your questions, you will not have to re enter your ESN, but you will have to reactivate your phone on the network. Also, you phone will likely act differently, depending on the ROM you select. Network communication shouldn't be affected, but again, when you flash a custom ROM, anything is possible.

make sure you have the most recent winrar update... that was the issue that I kept having. after flashing MR I typically (weither it needs it or not) *228 altho this may be different for sprint since most ROMS require this. Make sure you also have a good backup for contacts. I use PIM backup which is already included on MR.
When you start flashing after unlocked make sure your phone is in bootloader screen.

The same way you would activate a phone normally. I don't exactly know how it works for sprint, but with verizon, you would do a *228 option 1. and if that doesn't work, call verizon, tell them your device needed to be hard reset, and get a new akey. and they should walk you through the process. But that's verizon. I'm not sure how sprint does it (luckily, you're an employee)

If you are on Sprint your flash shouldn't require you to re-activate. It will boot up, so hard reset then it will work fine.

They are correct, for MightyROM you should not need to do any activation after you flash it if you are on Sprint.
Also, this should be in the regular Touch Pro forum instead of upgrades.
