When cooking a rom

when cooking a rom. is it possible to replace the core files of the rom say like tmail or the contacts with a different, nicer looking program?

tmail is a tough one to replace. i've had luck with a few things, like office, IE, and a couple other things but not tmail. Would be nice though to put the threaded email into a com 2 build though

alright so changing core files like that, is there a change it could brick the phone or is that highly unlikly. Also if i found a rom i really like but want to make a few mods to it how do i go about doing that? Is there a way to extract the stuff i need from it?
