Go to Settings/System/Kernel to switch to low memory.

Im not accidentally running the cab twice either because its not like i choose the install path twice.
Not quite sure what you mean by "that in landascape," so...maybe?

Did you problems begin with the first cab you installed, or was it only recently? If I had to guess, it sounds like something didn't work with your flash. I'd recommend flashing again, and then doing a hard-reset before installing anything.

You click on Start -> Settings -> System and you are sure there is no Kernel option? I am guessing you are not using one of bbsandkm's ROMs then. What is the In that same System menu, please click on Device Information, and tell us what the ROM Version and ROM Date are.

When I open my phone and it enters landscape mode, if I press Start to open the Icon Honey Comb menu the image is stretch wide to fit landscape and it looks horrid.

And I always hard reset right after a flash. I've reflashed the latest build several times and there is always a new or different problem. My main issue is with performance. Reflashed a few times and the phone runs sloooow. I went back to a 217xx build but then my mem was low! I'm gonna try reflashing again with 217xx I suppose but I hate TitaniumWeather.
