Building a new rom.

What would be the best one to use? 748, 931 or the other one. I don't remember off the top of my head. Looking for speed and stability more than anything. I will be adding about ten games, the Youtube player, Google maps, and a few others that is about it. Just want something with plenty of memory left over.

Since you're only using a few OEMs, go for 931.
Things to note when cooking a 931 ROM:
- Don't include "PPCContacts Manager"
- After installing the ROM, browse to: Start>Settings>Input>"Word Completion" Tab>UNTICK the boxes on that page
This will greatly increase your texting speed.
- Relating to my first tip, some users have experienced lagginess when they include too many OEMs, some of which are not 100% compatible with 931.
Best way to compare the speed yourself is to build two ROMs, one with 755 and one with 931. Use the same OEMs so you can compare.
Also, though unproven, users have been complaining about 931's battery life...

No, its an OEM in the kitchen. Just find it and don't tick it. I saw somewhere in the 931 thread that it causes problem. You can add other OEMs...but again, keep in mind that it MIGHT be incompatible with 931. For me, I'm just using stock contacts...no need to install any OEMs.
