Tip-Toe at first

Ok guys/gals. I recently became the proud new father of a brand new bouncing Samsung Epic 4g. I'v aptly named her "Gorgeous"! Last night, 1 day old, she became rooted. (I used the One Click root and recovery + clockwork mod found on the home thread of the Epic 4g.)
My question is....what is the best Rom for Gorgeous? I don't want to be overwhelmed at first...but I'd like to teach her some new tricks (wifi tethering...etc).

Suggestions? I'm used to flashing...I've migrated this way via the Evo.

Can you be a bit more specific, what are you looking for..is it speed or stability..do you want TouchWiz or not..etc..
