I think you are talking about the bar at the top that goes from red to green. I have that one on mine. It shows how much is left in the battery. Nice little option.

Every time I try to use one of the themes, it just changes the color to a light turquoise, and never changes the whole theme.

Any reasons why?

I am using No2Chem Rom 5060 & HTC Home as well.
