I never updated the OS on my 700wx for just that reason. I know there are other ROMs out there that have been reported to be snappier, but I am a believer that devices are made with a specific OS in mind. I know there are the devices that are flexible enough to upgrade without issue, but I don't think the 700wx (or Treo's in general so far) are one of them. I really didn't see anything in the 6.1 that I 'needed' that 5 didn't have.

Other than being a bit more sluggish, did you get the functions you wanted running?

I've taken my Treo from the stock WM5 to a customized WM5 to the official WM6, and am now running nightraven's WM6.1 for the VZW 700wx. I haven't seen any drop in performance

I've heard nightraven's was the best. He had many versions before it got to that point, but I think he had the most success of other custom ROMs for the 700wx I have seen (In fact, if I remember correctly, it has even been flashed to a 700w with pretty good success!!!).
