Can anyone tell me how to back up my contacts on a stock touch pro?

there's also Microsoft Outlook if you have office installed or Microsoft myphone which a free online service that works really well or if you use hotmail it can double as a contact back up

Could use PImBackup or just save the pim.vol in the \ directory.

You can also back it up using online services like Microsoft MyPhone or even Gmail. The thing about syncing with Gmail is that all your contacts become Last Name, First Name format, but on the plus side if you use Gmail as much as I do it's helpful to have one centralized place to keep my contacts. It even downloads the contact image that the person chose for themselves if they use Gmail as well.

MS MyPhone backs up your text messages as well, it's in beta, but it looks like it has a lot of potential. This way if you ever lose your phone with the backup on your storage card, you can still restore online.

My favorite has already been mentioned: just copy pim.vol from the root of your phone.

It takes like three seconds, and when you restore it to your phone, there's no hard reset necessary.

Like most WinMo users, you should have a folder with all your cabs in it, I just put my pim.vol in there.
