Is there a way to extract the images out of a rom?

What images are you trying to extract? You can use a file explorer to copy most images from the windows folder to another location.

Like the manila and dialer images so I can edit them to my liking.

just connect in activesync and copy paste from the windows folder to your pc make sure you have your pc set up to show hidden and system files though
