I was hoping Handcent could be toned down to do this, but it seems it's not configurable enough...

First see if you have this installed:
Go to Settings->System and look for "Text Messaging". If you have it then you can change back to classic mode.

Otherwise there is a registry tweak:
HKCU\Software\Microsoft\Inbox\Settings\OEM
"SMSInboxThreadingDisabled"=dword:1
